Retro 1973 Chili and corn muffin recipe

Long ago in the late 20th century, before the time of opening the magic black mirror in your palm and accessing the knowledge of mankind, recipes were a much sought after and cherished item.  The age of frozen and canned atomic age everything had passed and a new generation of post hippies wanted to try their hand at cooking too!

 

These culinary columbuses were treading on new territory.  While every 15 year old on earth these days has learned how to pan fry a steak from Gordon Ramsay himself, cooking was still a mystery to many.

 

Before the internet, and after cookbooks became passe, there was a brief period where the recipe card reigned supreme.  Like a baseball trading card of horrors many of these cards were adorned with aspic abominations that illicit nothing but laughter and disgust from modern palettes.

Chili Beans with Corn Muffins

350°

1 package corn bread mix
2 pounds chili and beans (canned or frozen)
½ cup shredded Cheddar cheese
½ cup chopped onions

Prepare cornbread according to the directions on the package. Cool and cut into 5-inch round or square muffins. Preheat oven to 350°. Place muffins in a baking pan. Warm chili and beans following directions on the package. Place ¼ of the chili, cheese and onions on each muffin. Heat in the oven for 10 minutes.

Serves 4
Preparation time: 1 HR.

olive cheese and celery jelly anyone?

Kept in small plastic boxes in brown, green, orange etc and hidden away from grubby fingers, every gen x and millenial kid knew when these babies came out you were either in for a treat or a terrible 'surprise' of some sort or another.

 

But with the Beach n' Chili Fest on the horizon this recipe actually caught my attention!  No one loves cornbread like Retro, and the chili cornbread combo?  it's like a Carolina Indian Taco!

While creators like June Cleaver's Vintage Closet on Facebook is famous for subjecting her adoring husband to these lost and thought forgotten dishes, I do not have the nerve or spouse to sample said savory samplings, but this is one recipe card that actually seems appetizing!
